Halloumi Sandwich 1 Chibbata ( got from M&S) 1 Halloumi cheese Basil leaves Tomato slices Pesto sauce ( used the m&s pesto for pasta) Olive oil Sun dried tomatoes 1. Put a little olive oil and pest on the chibbata and grill in the oven 2. Grill halloumi on the pan 3. Assemble the sandwich- halloumi, tomato, basil leaves, din dried tomato Halloumi has a lot of salt additional salt not required
Chutney: chop 2 large tomatoes, put in a large+ deep dish, and microwave uncovered till soft. If the dish is not large+deep then the liquid from the tomatoes boils over during microwaving. Put tomatoes aside to cool. Heat 3-4 tablespoons of oil in a pan and stir fry 11-12 whole dry red chillies till they start darkening (and get crisp). Put aside to cool. Once the tomatoes and chillies are cool, put both in a grinder. Add a large handful of roasted peanuts. Add salt to taste. Add a teaspoon of minced garlic or 3-4 pods. Also add the leftover oil from frying the chillies. Grind till smooth. Chutney is ready Momo filling - fry onion cabbage add salt pepper and soy sauce Steam for about 7 minutes
